Gluten Free OREO Brownies

Ingredients

  • 250g unsalted butter
  • 225g CADBURY Baking Melts Dark Chocolate
  • 2 cups caster sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup Gluten Free plain flour
  • 95g OREO Gluten Free packet, roughly chopped

Preparation

  1. Preheat oven to 160C fan forced.
  2. Lightly grease and line a 24cm square cake tin.
  3. Heat butter and chocolate in a saucepan over low heat and stir until melted.
  4. Remove from heat and stir in sugar.
  5. Beat in eggs, one at a time. Add vanilla.
  6. Stir in flour and mix until thoroughly blended. Add OREO cookies and stir to combine.
  7. Pour into prepared tin and bake for 40 minutes.
  8. Check with skewer, the centre should still be fudgy and gooey. (Continue to bake for 5 minutes if you prefer your brownie more set.)
  9. Remove from oven and allow to cool completely in the tin.
  10. Cut into squares and serve.
  11. Store in airtight container.
